Haddock Provencale

Yield: 4 servings



Preheat oven to 400 F. Place chopped onions over bottom of 13 x 9-inch baking dish. Place haddock over onions and pour wine over.

Sprinkle tomato, garlic, oregano, salt and pepper over fish. Drizzle with oil. Bake 10 minutes per inch of thickness or until fish is close to the point of flakiness, when tested with a fork.

Remove haddock with a slotted spatula to a serving dish. Pour remaining juices from baking pan into a small saucepan. Boil over high heat until sauce is reduced, 2 minutes. Spoon sauce over fish.
